Dr. Simon Aloo, PhD

Dr. Simon Aloo holds a Bachelor of Science in Food Science and Nutrition with First Class Honours from Karatina University, Kenya, and both a Master's degree and PhD in Food Science and Biotechnology from Kangwon National University, South Korea. He is currently pursuing a second PhD in Biomedicine at Monash University in collaboration with the Baker Heart and Diabetes Institute, focusing on cardiometabolic diseases. His research spans nutrition, food science, biotechnology, and biomedical sciences, with numerous peer-reviewed publications.

Monicah Dunda is a Clinical Nutritionist and Public Health Nutrition professional with expertise in food science, clinical nutrition, and community health. She holds a bachelor's degree in food science and nutrition, and she is currently pursuing a master's degree in public health nutrition and policy at Karatina University, Kenya. She is a senior nutritionist at Kitui County Referral Hospital, where she supports clinical and community-based nutrition programs addressing malnutrition and non-communicable diseases.

Silas Ambundo is a Senior Teacher at Gititu Secondary School, where he has distinguished himself as an educator dedicated to fostering academic excellence, discipline, and holistic learner development. He holds a bachelor's degree in education (First Class Honors) from Karatina University, Kenya. He specialized in mathematics and physics. With over six years of experience in teaching and student mentorship, Silas has played a pivotal role in guiding students toward academic success and personal growth.

Joy Wekesa is a registered Clinical Nutritionist licensed by the Kenya Nutritionists and Dieticians Institute (KNDI). She has over six years of experience in clinical nutrition, community health, and the food industry. She holds a Bachelor of Science in Food Science and Nutrition from Karatina University. Her work focuses on improving nutrition outcomes through evidence-based dietary counselling, nutrition education, and the development of safe, nutrient-dense foods.
